Since the last Law & Motion article was about meal prep, this week I’m sharing one of my favorite, easy-to-prepare recipes for large batch meal prep. It’s full of protein, low fat, filling, spicy, and delicious.

Serving suggestions: Mix with a side of cooked brown rice, stuff into hollowed out bell peppers, or scoop on top of chopped lettuce for a taco salad for a hearty complete meal that you can feel good about eating.

Ingredients:

2 packages lean ground turkey

1 package ground chicken

Chopped red small/medium red onion (or half a large)

Chopped Garlic

Taco seasoning (or blend of cumin, chili powder, paprika or smoked paprika)

Low sodium black beans (drained)

Chopped brown mushrooms

Pico de gallo salsa (chopped tomato, cilantro, onion, jalapeno).

Sliced avocado.

Directions:

In a large skillet, sauté onion and garlic in olive oil.

Add the ground meat.

Once meat is cooked, drain excess water from skillet.

Add taco seasoning to taste.

Add chopped mushrooms and stir until mushrooms have softened.

Stir in black beans and pico de gallo.

Optional: finish by drizzling in your favorite hot sauce. Garnish with fresh sliced avocado.
